Maragogype Washed - Finca San Ramon (Arabica 1,200 - 1,500m altitude) - Maragogype, originally from Brazil, is a variety of the Arabica family known as Elephant bean due to its large size compared to the rest. The coffee plant is very high, but the annual yield is lower compared to other types of coffee plants.
This Maragogype has a screen (size of the bean) 19 up, which means that the bean is 7.5 mm and larger.
The coffee is distinguished by a balanced cup, fine acidity, creamy body, aromatic, intense chocolate taste and softness on the palate.
Finca San Ramon is located in Nicaragua high in the mountains of Jinotega. The plantation is now run by the fourth generation of the Rizzo family, who have been growing coffee for over 100 years. The combination of traditional knowledge and modern influences in coffee cultivation and processing plays a key role in this. The impressive finca sits at an altitude of between 1,200 and 1,500 meters in the shade of native trees and shrubs, amid high-quality Arabica coffee. Due to the high location and the numerous shade trees, which largely prevent direct sunlight, the coffee berries ripen more slowly, the beans (= kernel of the coffee berry) become harder and thus store more aromas. In addition, the shade trees also protect against wind and weather. Due to the mountainous land and this altitude, the use of machines or tractors is not possible. In harmony with nature, the ripe coffee berries are picked by hand in several cycles. The Arabica beans are peeled on site, fermented for 12 to 18 hours and dried.
About the equivalent of 50% of Finca San Ramon's coffee growing area consists of protected forest, rivers and waterholes. This allows the generations of microclimates that are crucial for a good harvest to be preserved.
